This soft fresh cheese is said to be a farm cheese, because it is made from organic pasteurized milk coming directly from the herd of Holstein cows on the Raymond Alary et fils family farm. The dough for this fresh mozzarella is spun by hand. Its delicate taste of fresh milk also has a slightly tangy flavour.
